Ingredients

2 large apples (Honeycrisp or Fuji work well)

1 cup plain Greek yogurt

2 tablespoons honey or maple syrup

1 teaspoon ground cinnamon

½ teaspoon vanilla extract

Juice of ½ a lemon

¼ teaspoon sea salt

Optional toppings: chopped nuts, granola, or dark chocolate chips

Instructions

Prepare the Apples: Wash the apples thoroughly and remove the cores. Slice them into ¼-inch thick rings. You can use a sharp knife or a mandoline for even slices.

Prevent Browning: In a bowl, combine lemon juice and a cup of water. Soak the apple rings in the lemon water for about 5 minutes to prevent browning. Drain and pat them dry with a paper towel.

Make the Yogurt Mixture: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), ground cinnamon, vanilla extract, and sea salt. Mix until smooth and creamy.

Coat the Apple Rings: Take each apple ring and dip it into the yogurt mixture, ensuring each side is evenly coated. Shake off any excess yogurt.

Freeze the Apple Rings: Place the coated apple rings on a parchment-lined baking sheet, making sure they don’t touch. Once all rings are coated, put the baking sheet in the freezer for about 2-3 hours.

Serve and Enjoy: Once fully frozen, you can enjoy them as is, or add your favorite toppings like chopped nuts, granola, or a sprinkle of dark chocolate chips for extra indulgence. Store any leftovers in an airtight container in the freezer.
