Frozen Yogurt Coconut Chocolate Pops

Ingredients
  

2 cups plain Greek yogurt

1 cup canned coconut milk (full fat for creaminess)

1/2 cup honey or maple syrup (adjust based on your sweetness preference)

1 tsp vanilla extract

1/2 cup shredded unsweetened coconut

1/2 cup dark chocolate chips (70% cocoa or higher)

1 tbsp coconut oil (for melting chocolate)

Pinch of sea salt

Optional: Fresh fruit or nuts for toppings

Instructions
 

Prepare the Base: In a mixing bowl, combine the Greek yogurt, coconut milk, honey or maple syrup, vanilla extract, and a pinch of sea salt. Whisk until smooth and creamy.

    Add Coconut: Gently fold in the shredded coconut, ensuring it’s evenly distributed throughout the yogurt mixture.

      Melt Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 20-second intervals, stirring in between, until fully melted and smooth. Set aside to cool slightly.

        Assemble Pops: Pour the yogurt-coconut mixture into your desired popsicle molds, filling them about 3/4 full. Then drizzle or spoon a layer of the melted chocolate on top of each mold (it will slightly sink into the yogurt).

          Swirl It: Using a skewer or a toothpick, gently swirl the chocolate into the yogurt mixture for a marbled effect, but don’t overdo it – you want distinct layers.

            Freeze: Insert popsicle sticks and freeze the molds for at least 6 hours or until fully set.

              Unmold: To release the pops, run warm water over the outside of the molds for a few seconds, then gently pull them out.

                Serve & Enjoy: Optional – dip the frozen yogurt pops in more melted chocolate and sprinkle with additional shredded coconut or chopped nuts before serving.
