2 ripe bananas

1 cup Greek yogurt (plain or flavored)

1 cup dark chocolate chips

1 tablespoon coconut oil

1/4 cup crushed nuts (such as almonds or walnuts)

1/4 cup shredded coconut (optional)

Prepare the Bananas: Peel the bananas and cut them in half crosswise. Insert a popsicle stick into the cut end of each banana half.

    Freeze the Bananas: Place the banana halves on a parchment-lined baking sheet and freeze for about 1–2 hours, until they are firm.

      Make the Yogurt Coating: In a mixing bowl, add the Greek yogurt. If using plain yogurt, you can sweeten it with a drizzle of honey or maple syrup to taste, then mix well.

        Coat the Bananas: Once the bananas are frozen, remove them from the freezer. Dip each banana half in the yogurt mixture, ensuring it is fully coated.

          Prepare Chocolate Coating: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 20-second intervals, stirring in between, until smooth.

            Chocolate Dip the Yogurt Coated Bananas: Using a fork, dip each yogurt-coated banana into the melted chocolate, allowing any excess to drip off.

              Add Toppings: While the chocolate is still wet, roll or sprinkle each pop with crushed nuts and shredded coconut, if desired.

                Freeze Again: Return the coated pops to the parchment-lined baking sheet. Freeze for an additional 2–3 hours, or until the chocolate coating is firm.
