Ingredients

2 cups plain Greek yogurt

1/2 cup honey or maple syrup

Zest of 2 large lemons

1/4 cup freshly squeezed lemon juice

2 tablespoons poppy seeds

1 teaspoon vanilla extract

A pinch of salt

Fresh blueberries or raspberries for garnish (optional)

Paper muffin liners

Instructions

Prepare the Mixture: In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), lemon zest, lemon juice, poppy seeds, vanilla extract, and a pinch of salt. Mix well until all the ingredients are thoroughly combined and smooth.

Taste Test: Give the mixture a taste; adjust the sweetness by adding more honey or maple syrup if needed, depending on your preference for sweetness.

Prepare Muffin Liners: Place paper muffin liners into a standard muffin tin. This will make it easy to remove the cups once they’re frozen.

Fill the Cups: Spoon the lemon poppyseed yogurt mixture into each muffin liner, filling them about 3/4 full to allow for expansion when freezing.

Freeze: Carefully transfer the muffin tin to the freezer. Allow the yogurt cups to freeze for at least 4 hours, or until solid.

Serve: Once frozen, remove the cups from the muffin tin by gently peeling back the paper liners. If they stick, let them sit at room temperature for a few minutes before trying again.

Garnish: Place the frozen yogurt cups on a serving plate or in a container. Optionally, top each cup with a few fresh blueberries or raspberries for a delightful and colorful garnish.

Enjoy: Serve immediately as a refreshing treat on a hot day, or store any leftovers in an airtight container in the freezer for up to two weeks.
