2 cups rolled oats

1 cup unsweetened shredded coconut

1/2 cup almond slivers (or your choice of nuts)

1/2 cup honey or maple syrup (for vegan option)

1/4 cup coconut oil (melted)

1 cup Greek yogurt (or dairy-free yogurt for a vegan option)

1 teaspoon vanilla extract

1/4 teaspoon salt

Optional: 1/2 cup dark chocolate chips or dried fruits (like cranberries or raisins)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.

    Prepare the Granola Mixture: In a large bowl, combine the rolled oats, shredded coconut, almond slivers, and salt. Mix well to ensure even distribution.

      Add Liquid Ingredients: In a separate bowl, whisk together the melted coconut oil, honey (or maple syrup), and vanilla extract. Pour this mixture into the dry ingredients and stir until everything is thoroughly combined and the oats are well coated.

        Bake the Granola: Transfer the granola mixture to the prepared baking pan. Press it down firmly and evenly. Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown. Remove from the oven and let it cool completely in the pan.

          Prepare the Yogurt Layer: While the granola is cooling, mix the Greek yogurt with a drizzle of honey or maple syrup to sweeten it, adjusting to your desired taste.

            Assemble the Bars: Once the granola has cooled, spread the yogurt mixture evenly over the granola layer. If desired, sprinkle dark chocolate chips or dried fruits on top, pressing them gently into the yogurt.

              Freeze the Bars: Place the assembled bars in the freezer for at least 2 hours to set up completely.

                Cut and Serve: Once frozen, lift the bars out of the pan using the parchment paper overhang. Cut into your desired bar size. Enjoy immediately or store in the freezer in an airtight container for up to a month.
