Ingredients

1 cup all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 large egg

1/2 cup cocoa powder

1 cup chocolate chips

1 cup coffee-flavored frozen yogurt (or your favorite flavor)

Whipped cream (for garnish)

Cocoa powder or chocolate shavings (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or spray with non-stick cooking spray.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, salt, and cocoa powder until well combined. Set aside.

Cream Butter and Sugars: In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together on medium speed until light and fluffy, about 2-3 minutes.

Add Egg and Vanilla: Add the egg and vanilla extract to the butter mixture, continuing to beat until fully incorporated.

Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.

Fold in Chocolate Chips: Gently fold in the chocolate chips until they are evenly distributed.

Fill the Muffin Tin: Evenly scoop the cookie dough into the prepared muffin tin, filling each cup about 3/4 full.

Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still soft. Remove from the oven and let cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Assemble the Cookie Cups: Once the cookie cups are completely cool, carefully create a small well in the center of each cup using the back of a spoon or your finger.

Fill with Frozen Yogurt: Spoon coffee-flavored frozen yogurt into each cookie cup, filling until slightly mounded.

Garnish: Top with a swirl of whipped cream and sprinkle with cocoa powder or chocolate shavings as desired.

Freeze: Place the filled cookie cups in the freezer for at least 30 minutes to allow the frozen yogurt to firm up before serving.

Serve: Remove from the freezer, let sit for a few minutes to soften slightly, and enjoy your Frozen Yogurt Mocha Cookie Cups!
