1 cup plain Greek yogurt

2 tablespoons unsweetened cocoa powder

2 tablespoons maple syrup (or honey)

1 tablespoon instant coffee granules

1/4 teaspoon vanilla extract

1/2 cup crunchy peanut butter

1/4 cup chopped roasted peanuts

1/4 cup mini chocolate chips (optional)

Pinch of sea salt

Mix the Yogurt Base: In a mixing bowl, combine the Greek yogurt, unsweetened cocoa powder, maple syrup, instant coffee granules, and vanilla extract. Whisk the mixture vigorously until it's smooth and well-blended, ensuring that there are no lumps of cocoa or coffee.

    Prepare the Peanut Filling: In a separate bowl, mix the crunchy peanut butter with a pinch of sea salt. Stir until smooth and creamy. If you want extra texture, fold in the chopped roasted peanuts and mini chocolate chips if using.

      Form the Bites: Using a small ice cream scoop or a spoon, drop small dollops (about 1 tablespoon each) of the yogurt mixture onto a parchment-lined baking sheet. Then, using your fingers or the back of a spoon, make a small indentation in the center of each dollop.

        Fill the Indentations: Spoon about 1/2 teaspoon of the peanut filling into each indentation on the yogurt dollops, making sure it's centered.
