3 cups fresh or frozen peaches, sliced

2 tablespoons light brown sugar

1 teaspoon cinnamon

1 tablespoon lemon juice

1 cup Greek yogurt (plain or peach-flavored)

1 cup vanilla or almond milk

1/4 cup honey or maple syrup (optional for sweetness)

1 teaspoon vanilla extract

2 cups granola or oat crumble (store-bought or homemade)

Fresh mint leaves, for garnish (optional)

Instructions
 

Prepare the Peaches: If using fresh peaches, wash, peel, and slice them. In a mixing bowl, combine the sliced peaches, light brown sugar, cinnamon, and lemon juice. Toss gently until well mixed and set aside to marinate for about 10 minutes.

    Blend the Yogurt Mix: In another bowl, whisk together the Greek yogurt, vanilla or almond milk, honey or maple syrup (if using), and vanilla extract until smooth and creamy. Adjust sweetness to taste.

      Layer the Ingredients: In a 9x9-inch square baking dish or equivalent, start by layering half of the granola or oat crumble at the bottom. Next, evenly spread half of the peach mixture over the granola.

        Add Yogurt Layer: Gently pour half of the yogurt mix over the peaches, spreading it evenly to cover the fruit.

          Repeat the Layers: Add the remaining granola or oat crumble on top of the yogurt layer, followed by the rest of the peach mixture. Finally, pour the remaining yogurt mix over the top.

            Freeze: Cover the baking dish with plastic wrap or aluminum foil and place it in the freezer. Allow it to freeze for at least 4-6 hours or until fully set.
