2 cups fresh peaches, peeled and diced

1 cup Greek yogurt (plain or vanilla)

1/2 cup honey or maple syrup (adjust based on sweetness preference)

1 tablespoon freshly grated ginger

1 teaspoon vanilla extract

1/4 teaspoon sea salt

Optional: 1/2 cup granola or crushed nuts for topping

Prepare the Peaches: Place the diced peaches in a blender or food processor. Blend until smooth, leaving a few small chunks for added texture if desired.

    Mix the Yogurt Base: In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), grated ginger, vanilla extract, and sea salt. Stir until the mixture is smooth and well combined.

      Combine Ingredients: Gently fold the pureed peaches into the yogurt mixture until fully incorporated. Be careful not to overmix; you want to maintain some peach chunks throughout.

        Pour and Spread: Line a square baking dish (approximately 8x8 inches) with parchment paper for easy removal. Pour the mixture into the dish, spreading it evenly with a spatula

          Freeze: Cover the baking dish with plastic wrap or a lid and place it in the freezer. Allow it to freeze for at least 4-6 hours, or until solid.

            Cut into Squares: Once fully frozen, remove the dish from the freezer. Lift out the frozen yogurt block using the overhanging parchment paper. Place it on a cutting board and cut into squares using a sharp knife.
