Ingredients

2 cups rolled oats

1 cup creamy peanut butter

½ cup honey or maple syrup

1 cup Greek yogurt (vanilla or plain)

½ cup chocolate chips (dark or milk, based on preference)

¼ teaspoon salt

1 teaspoon vanilla extract

½ cup chopped nuts (walnuts or almonds, optional)

Fresh fruit pieces (like banana or berries, optional for added flavor)

Instructions

Prepare the Mixture: In a large mixing bowl, combine the rolled oats, peanut butter, honey (or maple syrup), salt, and vanilla extract. Stir until well combined and the mixture is sticky but holds together.

Fold in Yogurt: Add the Greek yogurt to the oat mixture and gently fold it in until evenly distributed. Make sure everything is well combined and the mixture is creamy.

Add Extras: If you're including chocolate chips or chopped nuts, fold them into the mixture now. You can also add fresh fruit pieces if you desire.

Form Clusters: Line a baking sheet with parchment paper. Using a tablespoon, scoop out portions of the mixture and drop them onto the parchment paper, shaping them into clusters. Leave some space between them as they will expand a little while freezing.

Freeze: Place the baking sheet in the freezer for at least 2-3 hours, or until the clusters are completely frozen solid.

Store Safely: Once frozen, transfer the clusters to an airtight container or a resealable plastic bag. Keep in the freezer for up to one month.

Serve: Enjoy these delicious Frozen Yogurt Peanut Butter Oat Clusters straight from the freezer as a refreshing snack or dessert!
