Ingredients

2 cups plain Greek yogurt

1 cup pumpkin puree (canned or fresh)

1/2 cup maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon ginger powder

1/4 teaspoon salt

1/2 cup crushed graham crackers (for crust)

2 tablespoons melted butter or coconut oil

Whipped cream (for topping)

Optional: pecans or walnuts for garnish

Instructions

Prepare the Graham Cracker Crust:

    - In a medium bowl, combine the crushed graham crackers and melted butter (or coconut oil). Mix well until the crumbs are evenly coated.

      - Spoon the mixture evenly into the bottom of 8 small cups or ramekins, pressing down firmly to form a crust layer. Set aside.

        Make the Pumpkin Yogurt Mixture:

          - In a separate bowl, combine the Greek yogurt, pumpkin puree, maple syrup, vanilla extract, cinnamon, nutmeg, ginger powder, and salt. Mix until smooth and fully incorporated.

            - Taste the mixture and adjust the sweetness by adding more maple syrup if desired.

              Swirl the Mixtures:

                - Take a tablespoon of the pumpkin yogurt mixture and place it over each crust. Repeat until the cups are filled about 2/3 of the way.

                  - Use a butter knife or toothpick to gently swirl the pumpkin yogurt mixture, creating a marbled effect.

                    Freeze:

                      - Carefully place the cups in the freezer and let them freeze for at least 4 hours or until solid.

                        Serve:

                          - Before serving, let the cups sit at room temperature for about 5 minutes to soften slightly.

                            - Top with whipped cream and sprinkle with crushed nuts if desired.

                              - Enjoy your refreshing Frozen Yogurt Pumpkin Pie Swirl Cups!
