Frozen Yogurt Pumpkin Spice Crumble Bars

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup brown sugar, packed

½ teaspoon cinnamon

¼ teaspoon nutmeg

¼ teaspoon salt

For the Pumpkin Spice Frozen Yogurt:

2 cups plain Greek yogurt

1 cup pumpkin puree

½ cup honey (or maple syrup for a vegan option)

2 teaspoons pumpkin pie spice

1 teaspoon vanilla extract

Pinch of salt

For the Topping:

½ cup chopped pecans or walnuts

¼ cup mini chocolate chips (optional)

Instructions
 

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a mixing bowl, combine graham cracker crumbs, melted butter, brown sugar, cinnamon, nutmeg, and salt until the mixture resembles wet sand.

        - Press the crust mixture firmly into the bottom of a greased 9x9 inch baking dish to create an even layer.

          - Bake for 10 minutes, then remove from the oven and let it cool.

            Make the Pumpkin Spice Frozen Yogurt:

              - In another bowl, mix the Greek yogurt, pumpkin puree, honey, pumpkin pie spice, vanilla extract, and a pinch of salt until well combined and smooth.

                - Pour the mixture over the cooled crust, spreading it evenly.

                  Prepare the Crumble Topping:

                    - In a small bowl, mix the remaining crust mixture with chopped nuts. If desired, stir in mini chocolate chips.

                      - Sprinkle the crumble topping evenly over the pumpkin yogurt layer.

                        Freeze the Bars:

                          - Cover the baking dish with plastic wrap and place it in the freezer for at least 4 hours, or until completely frozen.

                            Serve:

                              - Once frozen, remove the bars from the dish using the edges of the parchment paper (if used). Let sit at room temperature for about 5-10 minutes to soften slightly for easier slicing.

                                - Cut into squares or rectangles and serve immediately. These bars can be stored in an airtight container in the freezer for up to 2 weeks.
