2 cups Greek yogurt (plain or vanilla)

1 cup fresh raspberries (plus extra for garnish)

1/4 cup honey or maple syrup (adjust to taste)

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon vanilla extract

Pinch of salt

1 tablespoon water (for raspberry puree)

1/4 cup granola (optional, for added crunch)

Prepare the Raspberry Puree: In a small saucepan over medium heat, combine the raspberries and 1 tablespoon of water. Cook for about 5 minutes, stirring gently until the raspberries break down and the mixture becomes syrupy. Remove from heat and strain through a fine sieve to discard seeds, creating a smooth puree. Set aside to cool.

    Mix the Yogurt Base: In a medium mixing bowl, combine the Greek yogurt, honey or maple syrup, lemon zest, lemon juice, vanilla extract, and a pinch of salt. Stir until well blended. Taste and adjust sweetness if necessary.

      Assemble the Swirl Rings:

        - Prepare silicone ring molds (or donut-shaped molds). Spoon a layer of the yogurt mixture into each mold, filling halfway.

          - Add a swirl of raspberry puree on top of the yogurt layer, then use a toothpick or skewer to gently swirl it together for a marbled effect.

            - Pour more yogurt mixture over the raspberry layer until the molds are full and swirl again lightly to incorporate some raspberry puree on top.

              Freeze the Rings: Place the mold in the freezer and let it freeze for at least 4-6 hours, or until completely solid.

                Unmold and Serve: Once frozen, remove the rings from the mold. If they’re difficult to release, run warm water over the outside of the mold for a few seconds. Serve immediately, garnished with fresh raspberries and a sprinkle of granola if desired.

                  Store Any Leftovers: If there are any leftover rings, wrap them tightly in plastic wrap or place them in an airtight container and return to the freezer.
