For the Crust:

1 cup graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

Pinch of salt

For the Raspberry Layer:

2 cups fresh raspberries (or frozen, thawed)

1/4 cup honey or maple syrup

1 tablespoon lemon juice

2 cups Greek yogurt (plain or vanilla)

For the Lemonade Layer:

1 cup fresh lemon juice (about 4-5 lemons)

1/2 cup granulated sugar

1 cup cold water

2 cups Greek yogurt (plain or vanilla)

Optional Garnish:

Fresh raspberries

Lemon zest

Mint leaves

Instructions
 

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a medium bowl, combine graham cracker crumbs, sugar, melted butter, and a pinch of salt. Mix until well combined.

        - Press the mixture into the bottom of a lined 8x8 inch baking dish, spreading it evenly. Bake for 8-10 minutes until lightly golden. Remove from the oven and let it cool completely.

          Make the Raspberry Layer:

            - In a blender or food processor, combine fresh raspberries, honey, and lemon juice. Blend until smooth.

              - Strain the mixture through a fine-mesh sieve to remove the seeds, if desired.

                - In a bowl, mix the strained raspberry puree with Greek yogurt until well combined.

                  - Pour the raspberry yogurt mixture over the cooled crust and spread evenly. Freeze for at least 1 hour or until set.

                    Prepare the Lemonade Layer:

                      - In a small saucepan over medium heat, combine lemon juice and sugar. Stir until sugar dissolves completely. Remove from heat and let cool.

                        - Once cooled, mix in cold water and Greek yogurt until smooth.

                          - Pour the lemonade yogurt mixture over the frozen raspberry layer, smoothing it out with a spatula. Freeze for an additional 2-3 hours or until completely set.

                            Serving:

                              - Once the bars are completely frozen, remove from the baking dish by lifting the parchment paper. Cut into bars or squares.

                                - Garnish with fresh raspberries, lemon zest, and mint leaves as desired. Serve immediately or store in an airtight container in the freezer for up to one month.
