2 cups plain or vanilla Greek yogurt

1 cup fresh strawberries, hulled and diced

1/4 cup granulated sugar (adjust to taste)

2 tablespoons lemon juice

1 teaspoon vanilla extract

2 tablespoons cornstarch

Pinch of salt

Cooking spray or parchment paper for lining the baking sheet

Prepare the Strawberry Jam: In a medium saucepan, combine the diced strawberries, granulated sugar, lemon juice, and a pinch of salt. Cook over medium heat until the strawberries soften and release their juices, about 5-7 minutes. Stir occasionally.

    Thicken the Jam: In a small bowl, mix the cornstarch with 1 tablespoon of cold water until smooth. Add this mixture to the saucepan and stir well. Continue to cook for 2-3 more minutes or until the mixture thickens. Remove it from heat and let it cool completely.

      Prepare Yogurt Mixture: In a mixing bowl, combine the Greek yogurt and vanilla extract. Stir well until fully mixed and smooth.

        Shape the Coins: Line a baking sheet with parchment paper or lightly spray it with cooking spray. Using a tablespoon, dollop the yogurt mixture in circles on the prepared sheet, about 2 inches in diameter. You should get approximately 12-15 yogurt coins.

          Add Strawberry Jam: Once the yogurt coins are shaped, take a spoonful of the cooled strawberry jam and gently place it in the center of each yogurt coin. Swirl the jam slightly with the yogurt to create a marbled effect.

            Freeze: Place the baking sheet in the freezer and let the yogurt coins freeze for at least 4 hours, or until completely solid.
