Ingredients

2 cups plain Greek yogurt

1 cup fresh strawberries, hulled and diced

1/4 cup honey (or maple syrup for a vegan option)

1 tablespoon lemon juice

1 tablespoon poppy seeds

1 teaspoon vanilla extract

A pinch of sea salt

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Strawberries: In a medium bowl, combine the diced strawberries with the honey and lemon juice. Let them macerate for about 10 minutes to release their juices and soften.

Mix the Yogurt Base: In a large mixing bowl, combine the Greek yogurt, vanilla extract, and a pinch of sea salt. Mix until smooth and well combined.

Incorporate the Strawberries: Gently fold the macerated strawberries (along with their juices) into the yogurt mixture. Be careful not to over-mix; you want some nice strawberry chunks throughout.

Add Poppy Seeds: Sprinkle in the poppy seeds and fold them into the yogurt-strawberry mixture evenly.

Form the Coins: Line a baking sheet with parchment paper. Using a cookie scoop or a spoon, scoop out the yogurt mixture and form small round coins (about 1-2 inches in diameter) on the parchment, spacing them a little apart.

Freeze: Place the baking sheet in the freezer and freeze the coins for at least 4 hours or until fully set.

Serve: Once frozen, remove the coins from the sheet and let them sit for a minute at room temperature to soften slightly before serving. Garnish with fresh mint leaves if desired.

Store: Keep any remaining coins in an airtight container in the freezer for up to a week.

Prep Time: 20 minutes | Total Time: 4 hours 20 minutes | Servings: Approximately 12-15 coins
