2 cups Greek yogurt (plain or vanilla)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

12 large fresh strawberries, hulled and sliced

10-12 graham crackers (or cookies of choice)

1/4 cup chocolate or almond slivers (optional, for topping)

Instructions
 

Prep the Yogurt Mixture: In a medium bowl, mix the Greek yogurt, honey (or maple syrup), and vanilla extract until smooth and well combined. Adjust sweetness to taste.

    Construct the Sandwiches: On a graham cracker, spoon a generous dollop of the yogurt mixture, smoothing it out slightly. Place 2-3 strawberry slices on top of the yogurt.

      Top It Off: Place another graham cracker on top of the strawberry layer, pressing down gently to create a sandwich. Repeat this process for the remaining crackers, yogurt mixture, and strawberries until all ingredients are used.

        Freeze: Place the assembled sandwiches on a parchment-lined baking sheet. If desired, sprinkle chocolate or almond slivers on top of the yogurt before freezing. Freeze for at least 4 hours, or until completely solid.
