1 ½ cups all-purpose flour

½ cup rolled oats

¾ cup brown sugar, packed

2 teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

½ cup Greek yogurt (vanilla or plain)

¼ cup milk (any kind)

⅓ cup vegetable oil or melted coconut oil

2 large eggs

1 teaspoon vanilla extract

1 cup mixed fresh fruit (e.g., strawberries, blueberries, raspberries, diced peaches)

¼ cup mini chocolate chips (optional)

¼ cup crushed nuts (like walnuts or pecans, optional)

2 tablespoons coarse sugar for topping (optional)

Instructions
 

Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.

    Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, rolled oats, brown sugar, baking powder, baking soda, salt, and cinnamon until well combined.

      Mix Wet Ingredients: In another bowl, whisk together the Greek yogurt, milk, vegetable oil, eggs, and vanilla extract until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and gently fold until just combined. Do not overmix; it’s okay if there are a few lumps remaining.

          Fold in Fruits and Extras: Carefully fold in the mixed fresh fruit, mini chocolate chips (if using), and nuts (if using).

            Scoop Batter: Using a scoop or measuring cup, distribute the batter evenly into the prepared muffin tin, filling each cup about 2/3 full.

              Top with Sugar: If desired, sprinkle coarse sugar on top of each muffin for a little extra sweetness and crunch.

                Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
