1 cup granulated sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 cup sour cream

1 tablespoon lemon juice

For the Fruit Salad Topping:

1 cup strawberries, hulled and sliced

1 cup blueberries

1 cup kiwi, peeled and diced

1 cup pineapple chunks (fresh or canned)

1 cup mandarin oranges (canned, drained)

2 tablespoons honey (optional, for sweetness)

1 tablespoon fresh mint leaves, chopped (for garnish)

For the Crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

1/4 cup granulated sugar

Instructions

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until well combined and resembles wet sand.

        - Press the mixture firmly into the bottom of a 9-inch springform pan.

          - Bake for 8-10 minutes until slightly golden. Remove from the oven and allow to cool.

            Make the Cheesecake Filling:

              - In a large mixing bowl, beat the softened cream cheese, granulated sugar, and vanilla extract together until smooth and creamy.

                - Gradually add in the sour cream and lemon juice. Beat until fully incorporated.

                  - In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until smooth.

                    Assemble the Cheesecake:

                      - Pour the cheesecake filling over the cooled crust, spreading it evenly.

                        - Cover the pan with plastic wrap and refrigerate for at least 4 hours or overnight for best results.

                          Prepare the Fruit Salad:

                            - In a medium bowl, combine the sliced strawberries, blueberries, kiwi, pineapple, and mandarin oranges. If using, drizzle with honey for added sweetness and gently toss to combine.

                              Top the Cheesecake:

                                - Once the cheesecake is set, carefully remove it from the springform pan.

                                  - Spread the fruit salad evenly over the top of the cheesecake. Garnish with chopped mint leaves for a fresh touch.

                                    Serve:

                                      - Slice the cheesecake and serve chilled. Enjoy the refreshing blend of creamy cheesecake and vibrant fruits!
