Garlic and Herb Rotini Salad

12 oz rotini pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 bell pepper (red or yellow), diced

1/4 cup red onion, finely chopped

1/2 cup black olives, sliced

1/4 cup fresh parsley, chopped

1/4 cup fresh basil, chopped

4 cloves garlic, minced

1/2 cup extra virgin olive oil

3 tablespoons red wine vinegar

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

1/4 cup grated Parmesan cheese (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, add the rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

    Prepare the Vegetables: In a large bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, black olives, parsley, and basil. Toss gently to mix.

      Make the Dressing: In a separate small bowl, whisk together the minced garlic, olive oil, red wine vinegar, oregano, thyme, salt, and pepper until well combined.

        Combine Pasta and Dressing: Add the cooled rotini to the bowl of vegetables, then pour the dressing over the top. Toss everything together until the pasta and vegetables are evenly coated with the dressing.

          Chill: Cover the salad with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld together.

            Serve: Just before serving, give the salad a good toss. If desired, sprinkle with grated Parmesan cheese. Adjust seasoning with extra salt and pepper, if needed. Enjoy!
