1 lb (450g) boneless, skinless chicken thighs

4 medium-sized Yukon Gold potatoes, diced into 1-inch cubes

4 tablespoons unsalted butter

6 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

1 tablespoon fresh parsley, chopped (for garnish)

Salt and pepper to taste

1 tablespoon olive oil

1 cup chicken broth

Juice of 1 lemon (about 2 tablespoons)

Prep the Chicken and Potatoes: Start by seasoning the chicken thighs with salt and pepper on both sides. In the meantime, rinse and dice the Yukon Gold potatoes into cubes, ensuring they are similar in size for even cooking.

    Brown the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken thighs to the skillet and cook for approximately 5-6 minutes per side or until they are golden brown and cooked through. Once done, remove the chicken from the skillet and set aside.

      Cook the Potatoes: In the same skillet, add the diced potatoes. Cook for about 10 minutes, stirring occasionally, until the potatoes start to become tender and golden brown. If they stick to the pan, you can add a touch more olive oil.

        Add Garlic and Seasonings: Lower the heat to medium. Make a well in the center of the potatoes and add the butter and minced garlic. Stir for about 1 minute or until the garlic is fragrant. Add the dried thyme and oregano, and mix everything together.

          Combine Ingredients: Pour in the chicken broth and lemon juice, then stir everything to combine. Bring the mixture to a simmer and cook for an additional 5-7 minutes, allowing the potatoes to absorb the flavors and become tender.

            Return Chicken to Skillet: Add the browned chicken thighs back into the skillet, cover it, and let everything simmer together for another 5-10 minutes. This not only warms the chicken through but also melds the flavors perfectly.
