Ingredients

2 cups canned chickpeas (drained and rinsed)

4 tablespoons unsalted butter

4 cloves garlic (minced)

2 tablespoons fresh lemon juice

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon salt (adjust to taste)

¼ teaspoon black pepper

2-3 tablespoons vegetable broth (or water for desired consistency)

Fresh parsley for garnish (chopped)

Instructions

Sauté the Garlic: In a medium skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant and lightly golden, about 1-2 minutes. Be careful not to burn the garlic.

Prepare the Chickpeas: In a mixing bowl, add the drained chickpeas. Using a fork or a potato masher, start mashing them until they reach a chunky consistency.

Combine Everything: Add the sautéed garlic (with its butter), lemon juice, cumin, smoked paprika, salt, and black pepper to the mashed chickpeas. Mix until well combined.

Adjust Consistency: Gradually stir in vegetable broth, one tablespoon at a time, until you reach your desired creamy consistency. If you prefer a smoother texture, you can use a hand blender to purée the mixture further.

Taste and Adjust Seasoning: Taste the mash and adjust seasoning if needed, adding more salt, pepper, or lemon juice according to your preference.

Serve: Spoon the Garlic Butter Chickpea Mash onto plates or bowls and garnish with freshly chopped parsley. Drizzle with a little more melted butter or a splash of olive oil if desired.
