Garlic Butter Shrimp with Creamy Pasta

8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

4 tbsp unsalted butter

5 cloves garlic, minced

1/2 tsp red pepper flakes (optional)

1/2 cup chicken or vegetable broth

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 tbsp freshly chopped parsley

Salt and black pepper to taste

Zest of 1 lemon

Juice of 1/2 lemon

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

    Prepare the Shrimp: Season the shrimp with salt and black pepper.

      Sauté the Shrimp: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the shrimp and cook for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

        Make the Garlic Butter Sauce: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.

          Combine and Thicken: Pour in the chicken or vegetable broth and let it simmer for 2-3 minutes. Then stir in the heavy cream, lemon zest, and lemon juice. Bring to a gentle simmer, allowing the sauce to thicken slightly (about 3-4 minutes).

            Add Cheese and Season: Stir in the grated Parmesan cheese until melted and smooth. Taste and adjust seasoning with salt and pepper as needed.

              Combine Pasta and Shrimp: Add the cooked fettuccine and shrimp back into the skillet, tossing everything together to coat in the creamy garlic butter sauce. If the sauce is too thick, add reserved pasta water a bit at a time until you reach your desired consistency.

                Garnish and Serve: Remove from heat and stir in the chopped parsley. Serve immediately with an extra sprinkle of Parmesan cheese and lemon wedges on the side.
