1 lb (450g) large shrimp, peeled and deveined

2 medium zucchinis, spiralized or diced

1 cup jasmine rice (or any rice of your choice)

4 cloves garlic, minced

1/2 cup unsalted butter (1 stick)

1/2 cup chicken broth (or vegetable broth)

1 tablespoon olive oil

1 teaspoon red pepper flakes (adjust for heat preference)

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Juice of 1 lemon

Zest of 1 lemon

Instructions
 

Cook the Rice: In a medium saucepan, combine the rice and 2 cups of water. Add a pinch of salt and bring to a boil. Once boiling, cover and reduce heat to low. Cook for about 15-20 minutes or until all the water is absorbed. Fluff with a fork and set aside.

    Prepare the Shrimp: In a large skillet, heat olive oil over medium heat. Add the minced garlic and red pepper flakes, sauté for about 1 minute until fragrant. Be careful not to burn the garlic.

      Cook the Shrimp: Add the shrimp to the skillet. Season with salt and black pepper. Cook for about 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
