1 pound (450g) potato gnocchi

3 tablespoons unsalted butter

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup zucchini, chopped

1 bell pepper (red or yellow), diced

1 cup spinach leaves

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

Grated Parmesan cheese (for serving)

Fresh basil leaves (for garnish, optional)

Instructions
 

Cook the Gnocchi: In a large pot of salted boiling water, cook the gnocchi according to package instructions (usually 2-3 minutes, until they float to the surface). Drain and set aside.

    Prepare the Veggies: In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute, until fragrant. Be careful not to burn the garlic.

      Sauté the Vegetables: Add the cherry tomatoes, zucchini, and bell pepper to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the veggies are tender and the tomatoes start to release their juices.

        Combine with Gnocchi: Add the cooked gnocchi to the skillet along with the spinach and dried Italian herbs. Stir well to combine and cook for another 2-3 minutes until the spinach wilts and everything is heated through.

          Season and Serve: Season with salt and pepper to taste. Remove from heat and serve immediately, topped with grated Parmesan cheese and freshly torn basil leaves if desired.
