Garlic Herb Air Fryer Tofu Wraps

14 oz firm tofu, pressed and cubed

3 tablespoons olive oil

4 cloves garlic, minced

2 teaspoons dried oregano

2 teaspoons dried thyme

1 teaspoon smoked paprika

Salt and pepper, to taste

4 whole wheat or spinach wraps

1 cup fresh spinach leaves

1 medium tomato, diced

½ cup cucumber, diced

¼ cup red onion, thinly sliced

½ avocado, sliced

Optional: Hummus or tzatziki sauce for spreading

Instructions
 

Prepare the Tofu: Start by pressing the tofu for at least 30 minutes to remove excess moisture. Then, cut the tofu into 1-inch cubes.

    Marinate the Tofu: In a large mixing bowl, combine olive oil, minced garlic, dried oregano, thyme, smoked paprika, salt, and pepper. Add the cubed tofu to the bowl and gently toss until each piece is well-coated. Let it marinate for 15-20 minutes.

      Air Fry the Tofu: Preheat your air fryer to 375°F (190°C). Once preheated, spread the marinated tofu in a single layer in the air fryer basket. Cook for 15-20 minutes, shaking the basket halfway through, until the tofu is golden and crispy.

        Assemble the Wraps: While the tofu is cooking, prepare your wraps. Take each whole wheat or spinach wrap and spread a layer of hummus or tzatziki sauce (if using) in the center.

          Add Fillings: Layer fresh spinach leaves, diced tomatoes, cucumbers, and red onion on top of the spread. Once the tofu is ready, remove it from the air fryer and let it cool slightly before adding it to the wraps.

            Wrap it Up: Place the crispy tofu in the center of each wrap, followed by avocado slices. Fold in the sides of the wrap, and then roll it tightly from the bottom to the top.

              Serve: Cut the wraps in half diagonally and serve immediately. These wraps are delicious on their own or can be paired with a light salad or dipping sauce.
