Ingredients

1 pound (450g) fresh button or cremini mushrooms, cleaned and stems trimmed

4 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon dried rosemary

1 teaspoon salt

½ teaspoon black pepper

Fresh parsley, chopped (for garnish)

Zest of 1 lemon (optional, for added brightness)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

Prepare the Mushrooms: In a large bowl, add the cleaned mushrooms. If using larger mushrooms, consider halving or quartering them for even cooking.

Make the Herb Mixture: In a separate small bowl, whisk together olive oil, minced garlic, dried thyme, oregano, rosemary, salt, and black pepper until well combined.

Coat the Mushrooms: Pour the garlic herb mixture over the mushrooms and gently toss until they are evenly coated.

Arrange on Baking Sheet: Spread the seasoned mushrooms in a single layer on the prepared baking sheet, ensuring they are not crowded for optimal roasting.

Roast: Place the baking sheet in the preheated oven and roast the mushrooms for 20-25 minutes, or until they are tender and golden, stirring once halfway through to promote even cooking.

Finishing Touches: Once the mushrooms are done roasting, remove them from the oven and, if desired, sprinkle with fresh parsley and lemon zest for a burst of flavor.

Serve: Transfer the roasted mushrooms to a serving dish and enjoy them warm as a side dish, appetizer, or topping for salads and grain bowls!
