2 cups broccoli florets

2 cups cauliflower florets

1 cup baby carrots, halved lengthwise

1 cup bell peppers, sliced (any color)

1 medium red onion, cut into wedges

4 cloves garlic, minced

1/4 cup olive oil

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)

1 teaspoon smoked paprika

Salt and pepper, to taste

Zest and juice of 1 lemon

Fresh parsley, chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). This high temperature ensures that the veggies will roast perfectly, creating caramelized edges and tender interiors.

    Prepare the Vegetables: In a large mixing bowl, combine the broccoli, cauliflower, carrots, bell peppers, and red onion. Make sure they are cut into similar sizes for even cooking.

      Make the Herb Mixture: In a small bowl, whisk together the minced garlic, olive oil, thyme, rosemary, smoked paprika, lemon zest, and lemon juice. Add salt and pepper to taste.

        Combine: Pour the herb mixture over the prepared vegetables. Toss everything together well, ensuring all the veggies are evenly coated with the garlic herb oil.
