Ingredients

1 cup rolled oats

1/2 cup almond butter (or any nut butter of your choice)

1/4 cup honey or maple syrup

1 tsp ground ginger

1 tsp ground cinnamon

1/4 tsp ground nutmeg

1/4 tsp allspice

1/4 tsp salt

1/4 cup molasses

1/4 cup chopped walnuts (or pecans)

1/4 cup dried cranberries (or raisins)

1/4 cup dark chocolate chips (optional)

Instructions

Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, ground ginger, ground cinnamon, ground nutmeg, allspice, and salt. Mix well until the dry ingredients are fully incorporated.

Mix Wet Ingredients: In a separate bowl, mix together the almond butter, honey (or maple syrup), and molasses until smooth and well combined.

Combine Mixtures: Pour the wet mixture into the dry ingredients and stir until everything is combined. The mixture should be thick and hold together well.

Add Inclusions: Fold in the chopped walnuts, dried cranberries, and chocolate chips (if using).

Form Bites: Using your hands, scoop out tablespoon-sized amounts of the mixture and roll them into balls. Place them on a parchment-lined baking sheet or plate.

Chill: Place the energy bites in the refrigerator for at least 30 minutes to set. This will help them firm up and hold their shape.

Store: Once set, transfer the energy bites to an airtight container. They can be stored in the refrigerator for up to 1 week or in the freezer for longer storage.

Enjoy your delicious and energizing Gingerbread Energy Bites!
