1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

2 tablespoons poppy seeds

½ cup unsalted butter, softened (1 stick)

1 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

1 teaspoon almond extract (optional)

½ cup plain Greek yogurt

Zest of 2 medium lemons

¼ cup fresh lemon juice (about 1-2 lemons)

For the Glaze:

1 cup powdered sugar

2-3 tablespoons fresh lemon juice

Zest of 1 lemon (for garnish)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper for easy removal.

    Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and poppy seeds. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together with an electric mixer on medium speed until light and fluffy (approximately 3-4 minutes).

        Add Eggs and Extracts: Add the eggs one at a time, mixing well after each addition. Then, mix in the vanilla and almond extracts, ensuring everything is combined.

          Incorporate Yogurt and Lemon: Stir in the Greek yogurt, lemon zest, and lemon juice until just combined.

            Combine Mixtures: Gradually add the dry flour mixture to the wet ingredients, mixing just until combined. Do not overmix; a few lumps are okay.
