Ingredients

4 bone-in, skin-on chicken thighs

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

Salt and pepper, to taste

1/2 cup unsalted butter (1 stick)

3 cloves garlic, minced

Zest of 1 lemon

Juice of 1 large lemon (about 2-3 tablespoons)

1 tablespoon fresh parsley, chopped (for garnish)

Lemon slices (for garnish)

Instructions

Prepare the Chicken: Pat the chicken thighs dry with paper towels. Season both sides generously with salt, pepper, paprika, and garlic powder.

Sear the Chicken: In a large skillet over medium-high heat, add olive oil. Once hot, place the chicken thighs skin-side down in the skillet. Sear for about 6-7 minutes until the skin is golden brown and crispy. Flip the chicken and cook for an additional 5 minutes.

Bake the Chicken: Preheat the oven to 400°F (200°C). Transfer the chicken thighs to a baking dish, skin-side up, and bake for 20-25 minutes, or until the internal temperature reaches 165°F (75°C).

Make the Lemon Butter Sauce: While the chicken is baking, reduce the heat in the skillet to medium. Add the butter and allow it to melt. Stir in the minced garlic and cook for about 1-2 minutes until fragrant, being careful not to burn the garlic.

Add Lemon Flavor: Stir in the lemon zest and juice. Allow the sauce to simmer gently for another 2-3 minutes, stirring occasionally. Taste and adjust seasoning with salt and pepper if needed.

Glaze the Chicken: Once the chicken is done baking, remove it from the oven and pour the lemon butter sauce over the chicken thighs, making sure they are well-coated.

Serve: Garnish with fresh parsley and lemon slices. Serve the chicken thighs with the sauce drizzled over the top. They pair beautifully with steamed vegetables or fluffy rice.
