Golden Roasted Cauliflower Tacos

1 medium head of cauliflower, cut into florets

3 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and black pepper, to taste

8 small corn tortillas

1 cup red cabbage, finely shredded

1 avocado, diced

1/2 cup fresh cilantro, chopped

1 lime, cut into wedges

1/4 cup feta cheese (optional)

1/4 cup tahini or your favorite creamy dressing (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Cauliflower: In a large mixing bowl, toss the cauliflower florets with olive oil, smoked paprika, cumin, garlic powder, onion powder, salt, and black pepper until evenly coated.

      Roast the Cauliflower: Spread the seasoned cauliflower in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes or until golden brown and tender, turning halfway through.

        Warm the Tortillas: While the cauliflower is roasting, warm the corn tortillas. You can do this either in a dry skillet over medium heat for about 30 seconds on each side or by wrapping them in aluminum foil and placing them in the oven for the last 5 minutes of roasting.

          Assemble the Tacos: Once the cauliflower is done, remove it from the oven. To assemble, place a generous amount of roasted cauliflower on each tortilla, followed by a handful of shredded red cabbage, diced avocado, and a sprinkle of chopped cilantro.

            Garnish and Serve: Drizzle tahini or dressing over the tacos, if desired, and finish with crumbled feta cheese for an extra punch of flavor. Serve with lime wedges on the side for squeezing over the tacos.
