4 cups fresh peaches, peeled and diced (about 4 large peaches)

½ cup granulated sugar

2 tablespoons cornstarch

1 tablespoon lemon juice

1 teaspoon ground cinnamon

¼ teaspoon nutmeg

For the topping:

1 cup rolled oats

½ cup all-purpose flour

½ cup brown sugar, packed

¼ teaspoon salt

½ cup unsalted butter, softened

Prepare the crust: Preheat your oven to 350°F (175°C). In a mixing bowl, combine 1 ½ cups flour, ½ cup granulated sugar, baking powder, and salt. Pour in the melted butter and add the vanilla extract. Mix until crumbly. Press the mixture firmly into the bottom of a greased 9x13-inch baking dish to form an even layer. Bake for about 10 minutes until lightly golden, then remove from the oven and let cool slightly.

    Make the peach filling: In a large bowl, combine the diced peaches, ½ cup granulated sugar, cornstarch, lemon juice, cinnamon, and nutmeg. Gently stir until the peaches are well coated and let it sit for about 10 minutes to allow the juices to simmer.
