Greek Chicken Meatballs with Lemon Orzo

For the Chicken Meatballs:

1 lb ground chicken

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup finely chopped red onion

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1 tsp dried oregano

1 tsp salt

1/2 tsp black pepper

1/2 tsp ground cumin

1 large egg, lightly beaten

Zest of 1 lemon

Olive oil, for frying

For the Lemon Orzo:

1 cup orzo pasta

2 cups chicken broth (or vegetable broth)

Juice of 1 lemon

2 tbsp olive oil

1/4 cup fresh dill, chopped

Salt and pepper to taste

Lemon wedges, for serving

Prepare the Meatball Mixture:

    In a large bowl, combine the ground chicken, breadcrumbs, grated Parmesan, red onion, garlic, parsley, oregano, salt, pepper, cumin, egg, and lemon zest. Mix well until all ingredients are thoroughly incorporated.

      Form the Meatballs:

        Use your hands to form the chicken mixture into small meatballs, about 1 inch in diameter. You should yield around 20 meatballs.

          Cook the Meatballs:

            In a large skillet, heat a drizzle of olive oil over medium heat. Once hot, add the meatballs in batches, cooking for about 5-7 minutes per side, until golden brown and cooked through. Make sure to turn them carefully to maintain their shape. Set aside on a paper towel-lined plate to drain excess oil.

              Prepare the Lemon Orzo:

                In a pot, bring the chicken broth to a boil over medium-high heat. Add the orzo and reduce to a simmer. Cook according to package instructions until al dente, approximately 8-10 minutes.

                  Finalize the Orzo:

                    Once cooked, drain the orzo and return it to the pot. Stir in the lemon juice, olive oil, fresh dill, salt, and pepper. Mix until well combined and adjust seasoning as needed.

                      Serve:
