1 lb (450g) boneless, skinless chicken thighs, diced

1 cup orzo pasta

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 zucchini, diced

1 cup cherry tomatoes, halved

2 cups chicken broth

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

¼ cup feta cheese, crumbled

Fresh parsley, chopped (for garnish)

1 lemon, juiced and zested

Sauté the Chicken: In a large skillet, heat olive oil over medium heat. Season the diced chicken thighs with salt and pepper, then add them to the skillet. Cook for about 5-7 minutes until the chicken is browned and cooked through. Remove from skillet and set aside.

    Cook the Vegetables: In the same skillet, add the chopped onion and cook for about 2-3 minutes until translucent. Stir in the garlic, red bell pepper, and zucchini. Sauté for an additional 3-4 minutes, until the vegetables are tender.

      Add Orzo: Stir in the orzo pasta and cook for 1-2 minutes, allowing it to toast slightly.

        Combine Ingredients: Pour in the chicken broth, and add the cherry tomatoes, dried oregano, dried thyme, lemon zest, and cooked chicken back into the skillet. Stir until everything is well combined.

          Simmer: Bring the mixture to a gentle boil, then reduce the heat to low. Cover the skillet and let it simmer for about 12-15 minutes, or until the orzo is cooked al dente and has absorbed most of the broth. Stir occasionally to prevent sticking.

            Finish with Cheese and Lemon: Once cooked, stir in the lemon juice and crumbled feta cheese. Taste and adjust seasoning with additional salt and pepper if necessary.
