Greek Pasta Salad with Tzatziki Dressing

Ingredients
  

8 oz fusilli pasta (or your choice of pasta)

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (red or yellow), diced

½ red onion, finely chopped

½ cup Kalamata olives, pitted and sliced

1 cup crumbled feta cheese

¼ cup fresh parsley, chopped

Salt and pepper to taste

For the Tzatziki Dressing:

1 cup Greek yogurt

1 cucumber, grated and excess moisture squeezed out

2 garlic cloves, minced

1 tbsp fresh dill, chopped (or 1 tsp dried dill)

1 tbsp olive oil

1 tbsp red wine vinegar

Salt and pepper to taste

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fusilli pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

    Prepare the Vegetables: While the pasta is cooking, chop the cherry tomatoes, cucumber, bell pepper, and red onion. Place them in a large mixing bowl.

      Make the Tzatziki Dressing: In a medium bowl, combine Greek yogurt, grated cucumber, minced garlic, dill, olive oil, and red wine vinegar. Mix well until smooth. Season with salt and pepper to taste.

        Combine Salad Ingredients: Once the pasta has cooled, add it to the bowl with the chopped vegetables. Add the Kalamata olives, crumbled feta cheese, and freshly chopped parsley.

          Dress the Salad: Pour the tzatziki dressing over the pasta salad mixture. Gently toss until everything is well combined and evenly coated in dressing. Taste and adjust seasoning with salt and pepper as needed.

            Chill and Serve: For the best flavor, refrigerate the salad for at least 30 minutes before serving. This allows the flavors to meld together. Serve chilled and enjoy!
