Greek Salad with Feta

Ingredients
  

3 large ripe tomatoes, diced

1 medium cucumber, peeled and diced

1 bell pepper (any color), chopped

1 red onion, thinly sliced

1 cup Kalamata olives, pitted and halved

200g (about 7 oz) feta cheese, crumbled

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and freshly ground black pepper, to taste

Fresh parsley or mint, for garnish (optional)

Instructions
 

In a large salad bowl, combine the diced tomatoes, cucumber, bell pepper, and red onion.

    Add the Kalamata olives to the bowl, making sure to distribute them evenly among the vegetables.

      Gently fold in the crumbled feta cheese, being careful not to break it up too much.

        In a small bowl or jar, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper. Taste and adjust seasoning if necessary.

          Drizzle the dressing over the salad and toss gently to coat all the ingredients evenly.

            Let the salad sit for about 10 minutes to allow the flavors to meld together before serving.

              Garnish with fresh parsley or mint if desired, and serve chilled or at room temperature.
