Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 cup cold unsalted butter, cubed

1 cup shredded sharp cheddar cheese

1/2 cup cooked bacon, crumbled (about 4 slices)

1/2 cup chopped green chiles (canned or fresh)

3/4 cup buttermilk

1 tablespoon chopped fresh chives (optional for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 450°F (232°C). Line a baking sheet with parchment paper for easy cleanup.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

Add Butter: Cut in the cold butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.

Incorporate Cheese and Bacon: Stir in the shredded cheddar cheese and crumbled bacon until evenly distributed throughout the flour mixture.

Add Green Chiles: Fold in the chopped green chiles, ensuring they are evenly mixed.

Combine Wet Ingredients: Pour in the buttermilk and gently stir with a wooden spoon until the dough just comes together. Be careful not to overmix; a few lumps are okay.

Form Biscuits: Turn the dough out onto a lightly floured surface. Pat it into a rectangle about 1-inch thick. Using a biscuit cutter or a glass, cut out biscuits and place them onto the prepared baking sheet, leaving a little space between each.

Bake: Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown on top.

Serve: Remove the biscuits from the oven and let them cool for a couple of minutes. Optional: sprinkle chopped chives on top for an extra touch. Serve warm with butter or your favorite spread.
