Ingredients
  

1 cup all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 cup buttermilk

1 large egg

3 tbsp unsalted butter, melted

1 cup shredded cheddar cheese

½ cup green chilies, diced (canned or fresh, mild or hot depending on preference)

¼ cup sliced green onions

Cooking spray or extra melted butter for the waffle iron

Instructions
 

Preheat your mini waffle maker according to the manufacturer’s instructions.

    In a medium bowl, combine the all-purpose flour, baking powder, baking soda, and salt. Whisk together until well blended.

      In another bowl, mix the buttermilk, egg, and melted butter. Stir until well combined.

        Pour the wet ingredients into the dry ingredients. Gently fold together with a spatula until just combined – do not overmix.

          Add the shredded cheddar cheese, diced green chilies, and sliced green onions to the batter. Fold them in gently until evenly distributed.

            Lightly grease the mini waffle maker with cooking spray or a brush of melted butter.

              Pour about ¼ cup of the batter onto the preheated waffle maker for each waffle (adjust the amount based on your mini waffle maker's size). Close the lid and cook until the waffles are golden and crispy, usually about 3-5 minutes.

                Carefully remove the mini waffles and keep them warm in a low oven while you cook the remaining batter.
