Green Chili Chicken and Rice Casserole

2 cups cooked chicken, shredded (grilled or rotisserie)

1 cup long-grain white rice, rinsed

1 can (10 oz) diced green chilies

2 cups chicken broth

1 cup sour cream

1 cup shredded Monterey Jack cheese

1 cup frozen corn (optional)

1 small onion, diced

2 cloves garlic, minced

1 tsp cumin

1 tsp paprika

1 tsp salt

½ tsp black pepper

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C).

    Sauté the vegetables: In a large skillet over medium heat, add a splash of oil. Sauté the diced onion until translucent (about 5 minutes). Add the minced garlic and cook for another minute until fragrant.

      Mix ingredients: In a large mixing bowl, combine the shredded chicken, rinsed rice, diced green chilies, sautéed onion and garlic, chicken broth, sour cream, frozen corn (if using), cumin, paprika, salt, and black pepper. Stir until well combined.

        Prepare the baking dish: Lightly grease a 9x13 inch casserole dish. Pour the chicken and rice mixture into the prepared dish, spreading it out evenly.

          Add cheese: Sprinkle the shredded Monterey Jack cheese evenly on top of the mixture.

            Bake: Cover the dish with aluminum foil and bake for 30 minutes. After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown and the rice is fully cooked.

              Garnish and serve: Once done, remove from the oven and let it cool for 5 minutes. Garnish with fresh cilantro before serving.
