Green Chili Egg and Cheese Sliders

6 large eggs

1/2 cup milk

1 cup diced green chilies (fresh or canned)

1 cup shredded cheddar cheese

1/2 cup chopped green onions

1/2 teaspoon garlic powder

Salt and pepper to taste

12 slider buns (preferably brioche for a touch of sweetness)

2 tablespoons butter (for greasing)

Avocado slices (optional, for serving)

Salsa (optional, for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a baking dish with butter or cooking spray.

    Whisk Eggs: In a large mixing bowl, crack the 6 eggs and add the milk. Whisk until well combined and fluffy.

      Mix Ingredients: Stir in the diced green chilies, shredded cheddar cheese, chopped green onions, garlic powder, salt, and pepper. Mix well to ensure that all ingredients are evenly distributed.

        Cook the Egg Mixture: In a non-stick skillet, pour in the egg mixture and cook over medium-low heat, gently stirring until the eggs are just set but still slightly creamy, about 5-7 minutes. Remove from heat.

          Assemble the Sliders: Cut the slider buns in half. Place the bottom halves into the greased baking dish. Spoon the egg mixture generously over each slider bottom. Top with the slider buns' top halves to form sandwiches.

            Bake: Place the assembled sliders in the preheated oven and bake for about 15-20 minutes, or until the tops are lightly golden and the cheese is melted.

              Serve: Remove from the oven, let cool for a few minutes. Optionally, top each slider with avocado slices and serve with salsa on the side for an extra kick.
