Green Chili Sweet Potato Frittata

2 medium sweet potatoes, peeled and cubed

1 cup green chili peppers, chopped (mild or hot, based on preference)

7 large eggs

1/4 cup milk (or non-dairy alternative)

1 cup fresh spinach, chopped

1/2 cup red onion, diced

1 cup shredded cheese (cheddar or pepper jack work well)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Cook the Sweet Potatoes: In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium heat. Add the cubed sweet potatoes and sauté for about 10-12 minutes, or until they are tender and starting to brown. Stir occasionally to prevent sticking.

      Add Onion and Green Chili: Mix in the diced red onion and chopped green chili peppers. Cook for another 3-4 minutes until the onions are translucent.

        Prepare the Egg Mixture: In a large bowl, whisk together the eggs, milk, garlic powder, smoked paprika, salt, and pepper until well combined.

          Combine Ingredients: Add the chopped spinach to the skillet with the sweet potato mixture and stir briefly. Pour the egg mixture evenly over the veggies in the skillet, then sprinkle the shredded cheese on top.

            Bake the Frittata: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the frittata is puffed up and the eggs are set in the center.
