1 lb ground turkey

1 medium onion, diced

2 cloves garlic, minced

1 cup green bell pepper, diced

1 cup canned green chilies, drained

1 tsp ground cumin

1 tsp smoked paprika

½ tsp salt

½ tsp black pepper

4 large eggs

¼ cup shredded cheddar cheese

Fresh cilantro, chopped (for garnish)

Olive oil (for cooking)

Instructions
 

Sauté the Aromatics: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and cook for about 3-4 minutes until translucent. Stir in the minced garlic and diced green bell pepper, cooking for another 2-3 minutes until the peppers are slightly tender.

    Cook the Turkey: Increase the heat to medium-high and add the ground turkey to the skillet. Break it apart with a spatula and cook until browned and no longer pink, about 6-7 minutes.

      Season the Mixture: Once the turkey is cooked through, add in the drained green chilies, ground cumin, smoked paprika, salt, and black pepper. Stir well to combine and let it cook for an additional 2-3 minutes to let the flavors meld together.

        Prepare for Eggs: Make 4 small wells in the turkey mixture for the eggs. Carefully crack an egg into each well.

          Cook the Eggs: Cover the skillet with a lid and reduce the heat to low. Cook for about 5-7 minutes, or until the egg whites are set but the yolks are still runny (adjust cooking time based on your desired egg doneness).
