Grilled Balsamic Sandwich Melt

4 slices of sourdough bread

1 cup fresh spinach

1 medium tomato, sliced

1 ripe avocado, mashed

1 cup fresh mozzarella cheese, sliced

1/4 cup balsamic glaze

2 tablespoons olive oil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Prepare the Bread: Start by preheating a grill pan or a non-stick skillet over medium heat. Brush one side of each slice of sourdough bread with olive oil to ensure it gets a nice golden crust.

    Layer the Ingredients: On the non-oiled side of two slices of bread, layer the fresh spinach evenly. Then add the tomato slices, mashed avocado, and mozzarella cheese. Drizzle a tablespoon of balsamic glaze over the cheese and season with salt and pepper.

      Top and Grill: Cover with the remaining two slices of bread, oiled side up. Carefully place the sandwiches on the grill pan and cook for about 4-5 minutes or until the bread is golden brown and crispy.

        Flip and Melt: Using a spatula, gently flip the sandwich to the other side. Cook for another 4-5 minutes, occasionally pressing down slightly with the spatula to ensure the cheese melts evenly.
