4 slices of artisan sourdough bread

3 tablespoons unsalted butter, softened

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 teaspoon garlic powder

1/2 teaspoon dried oregano

1/4 teaspoon crushed red pepper flakes (optional)

1 tablespoon Dijon mustard (optional for added zest)

Fresh basil leaves for garnish (optional)

Prep the Bread: Spread a thin layer of softened butter on one side of each slice of sourdough bread. This will give the sandwich a crisp, golden crust.

    Mix Cheeses: In a mixing bowl, combine the shredded sharp cheddar and mozzarella cheeses. If you enjoy a hint of flavor, add in the garlic powder, oregano, and crushed red pepper flakes.

      Assemble the Sandwich: Take two slices of bread (buttered side down) and place half of the cheese mixture on one slice. If desired, spread Dijon mustard on the unbuttered side of the second slice. Cover with the second slice, buttered side up.

        Grill the Sandwich: Preheat a skillet or a griddle over medium heat. Place the sandwich on the skillet and cook for about 3-4 minutes, or until the bread is golden brown.

          Flip and Cook: Carefully flip the sandwich using a spatula. Cook the second side for another 3-4 minutes, pressing down slightly to ensure even grilling, until the cheese is melted and the other side is golden brown.
