1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

2 ripe peaches, pitted and cut into wedges

1 medium red onion, cut into chunks

1 red bell pepper, cut into squares

3 tablespoons olive oil

2 tablespoons honey

1 tablespoon balsamic vinegar

2 cloves garlic, minced

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)

Salt and pepper, to taste

Skewers (soak wooden skewers in water for 30 minutes if using)

Marinate the Chicken: In a large bowl, whisk together olive oil, honey, balsamic vinegar, garlic, thyme, salt, and pepper. Add the chicken cubes and toss to coat. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).
