Grilled Chicken Bruschetta Pasta

8 oz (225g) spaghetti or penne pasta

2 boneless, skinless chicken breasts

2 cups cherry tomatoes, halved

1 cup fresh basil leaves, chopped

3 cloves garlic, minced

1/4 cup balsamic vinegar

1/4 cup olive oil

1 tsp dried oregano

Salt and pepper to taste

Freshly grated Parmesan cheese (for garnish)

Instructions
 

Cook the Pasta:

    In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside.

      Marinate the Chicken:

        In a small bowl, combine the balsamic vinegar, olive oil, minced garlic, dried oregano, salt, and pepper. Place the chicken breasts in a resealable plastic bag or a shallow dish, pouring the marinade over them. Seal the bag or cover the dish, and let marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

          Grill the Chicken:

            Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade, letting the excess drip off. Grill the chicken for about 6-7 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C). Remove from the grill and let rest for 5 minutes before slicing.

              Prepare the Bruschetta Topping:

                In a large bowl, combine the halved cherry tomatoes, chopped basil, 2 tablespoons of olive oil, salt, and pepper. Mix well to combine.

                  Combine Pasta and Chicken:

                    In the same pot that you cooked the pasta, add the drained pasta along with the bruschetta topping. Toss gently to coat the pasta with the tomatoes and basil mixture. If desired, drizzle a little more olive oil for moisture.

                      Serve:

                        Slice the grilled chicken into strips and place on top of the pasta. Garnish with freshly grated Parmesan cheese and additional basil if desired. Serve immediately.
