For the Salad:

8 oz whole wheat penne pasta

2 boneless, skinless chicken breasts

2 tbsp olive oil

1 tsp dried oregano

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (red or yellow), diced

1/2 red onion, finely chopped

1 cup Kalamata olives, pitted and halved

1 cup feta cheese, crumbled

Fresh parsley, for garnish (optional)

For the Dressing:

3 tbsp olive oil

2 tbsp red wine vinegar

1 tbsp lemon juice

1 tsp Dijon mustard

1 clove garlic, minced

1 tsp honey (optional)

Salt and pepper to taste

Cook the Pasta: Bring a large pot of salted water to a boil. Add the whole wheat penne pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Chicken: While the pasta is cooking, preheat your grill to medium-high heat. In a small bowl, mix 2 tbsp olive oil, dried oregano, salt, and pepper. Brush this mixture over the chicken breasts.

      Grill the Chicken: Place the seasoned chicken on the hot grill and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Once cooked, remove from the grill and let it rest for 5 minutes before slicing it into bite-sized pieces.

        Make the Dressing: In a small bowl, whisk together 3 tbsp olive oil, red wine vinegar, lemon juice, Dijon mustard, minced garlic, honey (if using), and salt and pepper to taste. Adjust seasoning as needed and set aside.

          Combine Ingredients: In a large mixing bowl, combine the cooked penne pasta, grilled chicken, cherry tomatoes, cucumber, bell pepper, red onion, Kalamata olives, and feta cheese. Pour the dressing over the salad and gently mix to combine everything evenly.
