Grilled Chicken Peach Salad

2 boneless, skinless chicken breasts

2 ripe peaches, sliced

4 cups mixed salad greens (arugula, spinach, and romaine)

1/2 cup feta cheese, crumbled

1/4 cup red onion, thinly sliced

1/4 cup toasted pecans or walnuts

Salt and pepper, to taste

Olive oil, for grilling

For the Dressing:

1/4 cup balsamic vinegar

2 tablespoons honey

3 tablespoons olive oil

1 teaspoon Dijon mustard

Salt and pepper, to taste

Marinate the Chicken: In a bowl, combine a drizzle of olive oil, salt, and pepper. Add the chicken breasts and coat them well with the mixture. Let it marinate for at least 30 minutes, or up to 2 hours in the refrigerator for enhanced flavor.

    Prepare the Dressing: In a separate bowl, whisk together the balsamic vinegar, honey, olive oil, Dijon mustard, salt, and pepper until well combined. Adjust seasoning to taste and set aside.

      Grill the Chicken: Preheat your grill over medium heat. Once hot, place the marinated chicken breasts on the grill.
