1 lb boneless, skinless chicken thighs

2 tablespoons olive oil

3 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon oregano

Juice of 2 limes

Salt and pepper to taste

8 small corn tortillas

1 cup diced onions

1 cup chopped fresh cilantro

1 cup diced tomatoes

1 avocado, sliced

Lime wedges for serving

Instructions
 

Marinate the Chicken: In a bowl, combine olive oil, minced garlic, chili powder, cumin, smoked paprika, oregano, lime juice, salt, and pepper. Add the chicken thighs to the marinade, ensuring they are well-coated. Cover and let marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

    Preheat the Grill: Preheat your grill to medium-high heat. If using a grill pan, heat it over medium heat on the stove.

      Grill the Chicken: Remove the chicken from the marinade and place it on the grill. Cook for about 5-7 minutes per side or until the internal temperature reaches 165°F (75°C) and the chicken has nice grill marks.

        Rest and Slice: Once cooked, transfer the chicken to a cutting board and let it rest for 5 minutes. Then slice the chicken into thin strips.

          Warm the Tortillas: While the chicken is resting, warm the corn tortillas on the grill for about 30 seconds on each side until they are soft and pliable.

            Assemble the Tacos: Lay a few slices of grilled chicken onto each tortilla. Top with diced onions, chopped cilantro, diced tomatoes, and avocado slices.

              Serve: Serve the tacos immediately with lime wedges on the side for squeezing over the top.
